We are one of the first wineries in the region that cultivated grape vines on trellises. At the beginning, the way we used to grow vines represented a revolution in the area, as we decided to cultivate more vines per hectare than usual. Today, we have 3,300 vines per hectare, so we do not need vines producing more than two kilos of grapes.
Instead of the Anglo-Saxon tradition of single-variety wines –which are becoming popular nowadays- we opted for the Mediterranean tradition of "coupage". The right blend of different varieties, each one providing the best of them every year, results in excellent wines with their own personality.
In our winery we harvest at night, right when grapes are cooler, and we ferment each variety individually. We distinguish ourselves by using a destemmer and a sorting table when receiving grapes in the cellar instead of the usual crusher-destemmer.
The winery is also known for its smooth, long and daily vatting process to avoid breaking grains. We have a capacity of 300,000 litres and we daily receive 6,000 kilos of grapes. We also have 11 concrete tanks and 14 made of stainless steel. The influence of both tanks in the winemaking process is being studied at the Polytechnic University of Valencia by Francesc and Maria José Girón Peidro.
The philosophy of our winery has always been linked to our commitment to protect the environment.
We promote the cultivation of Bobal, the local grape variety.
We were among the first to grow foreign varieties such as Chardonnay and Sauvignon Blanc for white grapes, and Merlot, Syrah, Cabernet Franc and Cabernet Sauvignon for red ones. Our vineyards are the oldest and the ones with more quantity of these varieties in the region.
Our Mediterranean climate with continental influences is perfect for us to enjoy long cold winters and short warm summers. The range of temperatures that affect our winery is wide. This allows our vineyards to produce and assimilate nutrients during daylight, and to have a nice rest at night. Our vineyards grow in a slight slope; they receive sunlight and fresh air. The loamy chalky soil is very important in the sensory quality of our wines.
We have been developing ecological agriculture since 2006. It was not until 2010 when our wines received the mention of eco-friendly wines.
Chozas Carrascal, the best of our vintage in each bottle
Chozas Carrascal represents a firm commitment to produce single-estate wines at the highest international level. What makes us different from the rest is our determination and careful combination of tradition and modernity. We started working with a clear idea: to restructure our vineyards, keeping the centuries-old variety of Bobal and planting new varieties that would give an intimate and unique character to our wines.
Our vineyard is located on top of a small hill 700 meters above the Mediterranean Sea level. Despite being close to the sea (just 60 km), the climate in our vineyard is continental. This temperature and the limestone terrains give, as a result, a soil capable of producing wines of great personality. Complex. Bodied. Coloured. With persistence and minerality. With strength. With fruit, colour, tannins, ripeness and roundness. With freshness and primary aromas. The spring that runs through our land provides mineral water to grape varieties that do not exceed two kilos of production. We therefore offer the best of our vintage in each bottle.
In our vineyards Chozas Carrascal grow the traditional grape varieties from the Valencia region, but also varieties from other places. Some of them, such as Syrah or Sauvignon blanc, have been approved afterwards by the authorities of the Utiel-Requena Denomination of Origin (D.O.)
Thus, after comprehensive studies and careful planning, we grow 11 different grape varieties in our vineyards.
